Happy Monday friends!
We hope you all are enjoying the incredible spring weather! This warmer weather also brings some new great produce into season! Here are a few of our favorite fruits and veggies that are in season in Georgia right now.
Here is a great recipe to use some of these delicious ingredients this week!
Strawberry Salad with Goat Cheese and Strawberry-Balsamic Vinaigrette
1/2 cup sliced strawberries
1 tsp. Dijon mustard
1 tbsp. balsamic vinegar
1/2 tsp salt
1/4 cup grapeseed or canola oil
4-5 oz spinach or arugula
2 cups sliced strawberries
1/4 cup sliced almonds
2 oz goat cheese
In a blender, purée strawberries for dressing. Add Dijon, balsamic and salt and blend to combine. While blending, gradually add oil and blend until smooth. In a large bowl, toss arugula or spinach with a pinch of salt. Add just enough dressing to lightly coat and toss gently. Transfer greens to 4 individual plates (or divide into tupperware to meal prep for the whole week!) and add strawberries, almonds and cheese among the servings. Serve immediately and refrigerate any leftovers. Add a lean protein on top if you choose such as chicken or fish!
